Ok, so I’m still kinda stuck on the grilled chicken. Although, I probably predicted that last week. Maybe I actually did. I told Kyle that he better be prepared to grill clear through the winter. I’m pretty sure he knows that I’m serious.
The only meal I haven’t been eating chicken at is breakfast. But you know how that goes.
What do you get when a Mexican food lover finds grilled chicken? Well, grilled chicken tacos, of course! Add avocado, shredded cheese, and sauteed peppers. Oh, that’s steak in there, too. I can’t take credit for the delicious mix of taco meat – that was all prepped by the hubs, so I don’t really know what else is in it. It’s probably safe to say there was a fair amount of sriracha.
Chef salads have been a pretty popular hit the last couple of weeks too. Made with iceberg lettuce, veggies, a little bit of cheese, and a delicious garlic avocado salad dressing!

Ingredients
- ½ avocado
- ¼ cup Greek yogurt
- ¼ teaspoon garlic powder
- salt and pepper to taste
Instructions
- Cube up and mash your avocado in a bowl.
- Add Greek yogurt and seasonings.
- Stir and serve
