Roasted frozen broccoli!!
Did you have any idea you could roast frozen vegetables? It’s true. In fact, you can roast frozen vegetables of any variety you choose.
Ok soooo maybe you aren’t quite as excited about this cooking phenomenon as I was when I tried it, but you should be.
Why, do you ask? I’ll tell you!
- Frozen vegetables are cheaper. Costco has an abundance of frozen organic vegetables that are super affordable – much more affordable than the fresh counterparts. For example, I buy 4 pounds of organic frozen broccoli for $6
- Buying frozen vegetables eliminates the washing and chopping steps in food prep. You can literally tear a bag of frozen broccoli open, lay it on a pan, and cook.
- You can purchase and enjoy frozen vegetables that aren’t typically in season.
- You save room in your refrigerator from Tupperware storing said vegetables since they come in their own package. #duh
- Did I mention it’s super easy? Timer saver? How can you argue with that?
- Roasting vegetables, like broccoli, is hands down my favorite way to consume a veggie. And you can roast frozen vegetables just like you would any fresh veggie with absolutely NO need to thaw them out.
I used to think the only way to cook frozen vegetables was to boil or steam them, which can be utterly boring after a while. In the past, it was one of the reasons we’d get off track with a healthy lifestyle – we were so bored with our veggie options.
Read on to get this simple recipe for roasted frozen broccoli! And prepare to have your life changed forever. Ha!
What you need for Roasted Frozen Broccoli
The ingredients list here is SO simple, and should be things you already have at home!
- Frozen broccoli
- Olive oil
- Seasoning of choice
- Non-stick spray
My go-to seasoning for roasted veggies is always garlic salt. I LOVE salt, and this is just my favorite! Otherwise, everything seasoning or rosemary are great seasonings to pair with broccoli if you’re looking for some other ideas.
Generally, when I roast fresh broccoli, I flip it halfway through. But in an even bigger time-saving effort, I’ve been roasting frozen broccoli for 25-30 minutes without flipping it at all. To my surprise, the tops were still crispy too!
I actually introduced frozen broccoli to my aunt and uncle this week! They had never roasted it before and thought the crispiness of the crowns were delicious.
If you want extra-crispy veggies, you can broil them on high for just a couple of minutes! I usually like to do this with potatoes, but it can help give any other veggie a bit of extra crisp quickly if it doesn’t look brown enough.
