I admit, for many years, I fell into the ignorantly blissful trap that is sugar-free syrup. And pretty much sugar-free anything. Not only are the artificial sweeteners questionable for their health risks, but they also play trickery with your brain and actually cause you to overeat. In my case, it wasn’t biochemical trickery, more psychological. Since I’d eat fewer calories with the sugar-free syrup, I’d just eat ALL the pancakes, waffles, and French toast and rationalize that it was okay.
Now real maple syrup, real butter, and delicious, whole wheat applesauce waffles are a common breakfast item. This trio keeps me satiated all morning long – without feeling guilty about my food choices. I’ll never forget how difficult it was to be comfortable eating butter again. No matter how ridiculous that might sound, the aftermath of fat- and calorie-fearing mentality paves a long road to recovery. It took me nearly 10 years to discover the delightful world where butter is blended with coffee and generously slathered on whole wheat carbohydrates. I giggle and wince as I reminisce the misguided eating habits of the past.
Luckily we don’t live in the past; we live in the present. And today, I happily present you with a present—the gift of mouthwatering whole wheat applesauce waffles. Go whip out your whisk and waffle maker and get to work!

Ingredients
- 2 eggs
- 1 cup unsweetened almond milk
- ⅓ cup coconut oil
- ¼ cup maple syrup
- ½ teaspoon cinnamon
- ½ teaspoon baking soda
- 1½ cup whole wheat flour
- 1½ teaspoon baking powder
- 1 teaspoon vanilla
- 1 cup crockpot applesauce
Instructions
- In a small bowl, whisk together whole wheat flour, baking soda, baking powder, and cinnamon.
- In a larger bowl, mix together remaining ingredients. Stir well.
- Slowly mix in dry ingredients.
- Heat the waffle iron. Once ready, scoop ½ cup of batter into the iron. Cook approximately 3-4 minutes, depending on the waffle maker and heat setting.
- Remove and let cool on a wire rack, or serve immediately with butter and maple syrup.

Of course, I’d recommend making these waffles with homemade crockpot applesauce. It’s extremely simple, cost-effective, and gives you better control of what’s in your food. But if you have store-bought already at home, I can’t see you use it, and I don’t hold grudges. 🙂
