Chocolate Peanut Butter Energy Balls

Do you ever have days when you just can’t wait to get home and eat? This happens to me sometimes, and hangry strikes. You don’t wanna be around me when I’m hangry, that is fo sho.

There were a few days last week when I felt like my appetite was never-ending. I was a bottomless pit for anything with calories. Sometimes these days drive me crazy. Other days, I embrace them and eat ALL the chocolate peanut butter energy balls in my freezer!

I thought about taking some nicer pictures of these, but then I realized I already ate too many of them to do anything with. And I was too hungry (and lazy) to wait to eat something else, so I started eating as I photographed…

I am working to launch a free 5 day sugar-free group (coming soon!) so I’m looking to beef up my arsenal of easy-to-make sugar-free snacks that you can have on hand when that nasty little sugar fairy wants to fill your teeth with cavities!

This is a re-vamp of an old (like, old) recipe I had on the blog. That one used bananas, and this one uses crockpot applesauce, which was a fabulous choice! Sometimes I make my best choices when I have food I need to clean out of my fridge. It ended up being a fantastic substitution, with a few other ingredient changes, including the addition of homemade peanut butter.

OH, I just thought of something REALLY awesome – I need to make these with my vanilla cashew almond butter. YES!!

So these might get thrown around in my weekly meal planning and food prep rotation. Well, not literally thrown – because they are balls and could probably do some serious damage when frozen! Especially for someone like me who bruises easily. That’s a little known fact about me…it’s really a bad combination because I am also clumsy. I often run into drawers and doorknobs (don’t ask me how), so my arms and legs are frequently decorated with blue and purple splotches.

Next time you’re craving something sweet and need help fighting the urge, make a batch of these little balls and you’ll be good to go!

Description

I embrace them and eat ALL the chocolate peanut butter energy balls in my freezer!


Ingredients

Scale
  • ½ cup natural or homemade peanut butter
  • ½ cup crockpot applesauce
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons old fashioned oats
  • 3 packets stevia
  • 1.5 scoop vanilla Shakeology

Instructions

  1. Add all ingredients to a bowl and mix together.
  2. Form into 12 balls, and freeze for 1 hour.
  3. Eat frozen or slightly thawed!
