Healthy Chocolate Banana Fudge

Description

This healthy banana chocolate fudge has just a slight taste of banana to it. I cut it up into 16 bars, hoping it would last longer.


Ingredients

Scale
  • 1 ripe banana
  • 2 eggs
  • ½ cup unsweetened cocoa powder
  • ½ cup maple syrup
  • 2 teaspoons vanilla
  • ⅓ cup coconut oil
  • ⅓ cup of chocolate chips
  • ¼ cup flour of choice (I used all purpose)

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix cocoa powder and flour in a small bowl.
  3. Mix the banana, egg, syrup, and vanilla in a separate bowl.
  4. In a saucepan, heat the coconut oil and chocolate chips together on low until completely melted. Stir together with other wet ingredients.
  5. Add dry ingredients to wet ingredients and mix well.
  6. Pour batter into a greased glassed baking dish.
  7. Bake for 25-28 minutes until an inserted toothpick comes out clean.
