Weekly Meal Plan

Ok y’all…This is the week.

This is the week that you start FOOD PREPPING and start MEAL PLANNING!

That is, if you haven’t been doing it already! 🙂

I will admit to you that I have not been on my food prepping game lately. Lunches have been covered for the most part, but dinners? Not so much. I’ve made a PLAN, but I haven’t followed through on the food prep end.

Aaagh. I always kick myself in the butt in the middle of the week when I DON’T food prep dinners. Although we have done a good job the last couple weeks of choosing healthy dinners, they have taken more time to fix and decide on because we weren’t following the plan.’

And that plan has to start on the weekend, when you have time to carve a couple of hours into your schedule to get this important thing done. It doesn’t have to be two hours in a row…but maybe you get some snacks prepared or chop some veggies Saturday morning while you’re making breakfast or brunch. And then Saturday night you grill some extra meat with your dinner. And then Sunday you make some more lunches and decide and prep rice, protein, veggies for dinner!

However you do it, it will help you out all week long. I promise!

Here is this week’s meal plan:

Sunday – Homemade pizza night

Monday – Spinach turkey meatballs and cauliflower rice

Tuesday – Chili roasted cod with couscous and green beans

Wednesday – Black and white bean chicken chili

Thursday – leftovers

Friday – At home date night – Stuffed Shells and a bottle of wine

Saturday – Black bean taquitos

Here is what I will prep:

Breakfast casserole based on this recipe

Applesauce muffins (recipe coming!)
Homemade garlic hummus
Chop veggies for hummus and snacking
Other snacks will include: cottage cheese, bananas, almonds

Grilled pork chops
Green beans
Brown rice

Make meatballs
Mash cauliflower
Chop veggies to toss into salads
Make black and white bean chicken chili (crockpot)
(Weekend dinners will be made day of)
