I see it’s been well over a month since I last posted. Truth is, I guess I needed a bit of a hiatus. And now it appears I have a LOT of catching up to do!
I mean need to teach myself how to meal plan again, ha! I haven’t done much of that over the last month. Or much cooking either, as a matter of fact. It was kinda nice for a while. But now I miss it! I might even scoot into the kitchen to make some blueberry muffins right now, actually.
As far as Slim Sanity is concerned, I’m sure it will hang around, and we have plenty of time to catch up! I’ve been doing a little ‘soul searching’ as far as how much of my soul I still want to pour into this little blog that’s been slowly but steadily growing over the last three years. I miss sarcastically jabbering at you. And I miss cooking. But quite frankly, keeping up a blog is a lot of freakin’ work. I’ve been a little annoyed by spending huge chunks of my weekend photographing food, editing photos, writing posts and planning what recipes I’m going to make next. It started to feel like a chore. And that’s not what this blog is intended to be. There was a time when I saw myself becoming a full-time blogger, and I’m not certain I even want that anymore. I think it was harder to admit than it was to figure out. For the meantime, we’ll just see where this fun little hobby continues to take me!
We will see what kind of rhythm I can get back into for blogging. For now I’ll shoot for one meal plan and one recipe a week. If it happens, great! If not, oh well.
For now, here is what I plan to make this week!
Oh yea, I’m not really doing Paleo anymore either. I just like cheese and bread too much.

- Tuesday: Healthy Broccoli Chicken Casserole
- Wednesday: Leftover casserole/Softball night
- Thursday: Taco Pasta
- Friday: Turkey Burgers with carrot fries

- Brown ground beef
- Cook rice
- Cook chicken
- Granola bars
- Wash and chop fruit and veggies
