We got another small hint of fall weather this weekend in Dallas. And it was amazing! Even though it was cloudy and rainy – I’ll take it!
Saturday we took the day to hang out, work out, watch football, and cook. I experimented with some healthy brownie recipes, and we made some amazing chicken and black bean taquitos!
Today we are taking the day to be a little bit productive, and have a little bit of fun. We have church, we’ll get some food prep finished, and then we’re heading to a friend’s place to watch (more) football and carve some pumpkins!
Kinda really excited. I love carving pumpkins – but my FAVORITE part is roasting the seeds! Nothin’ like fresh roasted pumpkin seeds with a little bit of salt. Yum!
Here is this week’s meal plan
Sunday – Homemade pizza night
Monday – Creamy green veggie pasta sauce and spaghetti
Tuesday – Stuffed shells (this got pushed last week – we ended up with other plans for Friday)
Wednesday – Turkey meatloaf and pureed cauliflower
Thursday – Taco salads
Friday – Grilled chicken wings and homemade potato salad
Saturday – Out!
Here is what I will food prep this week
Read this post for more ideas on food prepping.
Mexican breakfast casserole
Healthy Sloppy Joes with green beans and potatoes (recipe coming on this!)
Veggie pasta sauce
Chop veggies for salads/snacking
Are any of y’all carving pumpkins this season? Or making real pumpkin puree? I wanna do that soon!
Hope you have a fabulous Sunday!
