Weekly Meal Plan

We got another small hint of fall weather this weekend in Dallas. And it was amazing! Even though it was cloudy and rainy – I’ll take it!

Saturday we took the day to hang out, work out, watch football, and cook. I experimented with some healthy brownie recipes, and we made some amazing chicken and black bean taquitos!

Today we are taking the day to be a little bit productive, and have a little bit of fun. We have church, we’ll get some food prep finished, and then we’re heading to a friend’s place to watch (more) football and carve some pumpkins!

Kinda really excited. I love carving pumpkins – but my FAVORITE part is roasting the seeds! Nothin’ like fresh roasted pumpkin seeds with a little bit of salt. Yum!

Here is this week’s meal plan

Sunday – Homemade pizza night

Monday – Creamy green veggie pasta sauce and spaghetti

Tuesday – Stuffed shells (this got pushed last week – we ended up with other plans for Friday)

Wednesday – Turkey meatloaf and pureed cauliflower

Thursday – Taco salads

Friday – Grilled chicken wings and homemade potato salad

Saturday – Out!
