I’m kinda craving casserole. Maybe I’ll blame it on the winter season that Dallas has finally seemed to move into…or my desperate desire to eat anything that is creamy or full of cheese.
The latter I can probably blame on my Wisconsin heritage.
In any case, it came to my attention that I really don’t have many casserole recipes on the blog. Casseroles aren’t always the most attractive foods to eat – whether we’re talking about our cameras or our healthy eating lifestyles.
It will now be my calling to change the way we look at casseroles. HOORAY?! I think that any food can be ‘healthified’ to an acceptable standard and become ‘Slim Sanity approved.’ (This term of approval is becoming common verbiage in our family – most of the time preceded with a NOT.)
Way back when I started this blog, I did post a casserole recipe that was one of my favorites, but it used a lot of the canned cream of celery my parents used to cook with all.the.time. This is no longer an ‘approved’ recipe…or any other ingredient made with a jar or can of processed junk.
The first recipe in this new challenge I’ve created for myself will be one with broccoli, chicken, cheddar cheese and water chestnuts. Hella yum.
