Weekly Meal Plan

I wanna take a minute to laugh at my ambitiousness from last week.

There were zero food-prepped breakfasts in the Ehle household last week.

It is actually almost comical that I made such a lofty goal. Whether I enjoy procrastinating, or making breakfasts at home a little too much, no pre-made casserole or batch of oats happened.

I actually only ended up needing to leave early one day last week. Monday I had off work, and Thursday I had to wait home in the morning for a delivery. The other two days, I enjoyed the extra 30 minutes to chat with Kyle as I cooked and ate breakfast.

I will make extra effort to be more organized in the mornings I know I need to get out the door early, and plan my workout that day for the evening. Moving the workout seems to be a better option than adding extra cooking to the weekend. I typically do a lot of cooking on the weekends as it is, since that is the only time I have to make and photograph new stuff for y’all!

What seems to work better for you? Making breakfast as you need it or preparing it ahead of time?

What I Prepped Yesterday/Will Prep Today

  • Crockpot chicken
  • Rice for dinner
  • Blueberry muffins
  • Green beans
  • Chocolate Peanut Butter Energy Balls
  • Rinse black beans
  • Rinse and chop onions, mushrooms, and peppers for eggs
  • Black bean dip – we will make this Saturday for snacking, and make extra
