Weekly Meal Plan

I’m gonna talk about breakfast for a minute.

The hubs and I are currently on two different eating lifestyles. Kyle has been doing the intermittent fasting route, and not eating until 10-11 AM. That means, no breakfast at home. I on the other hand, am still eating breakfast around 7-8 AM.

I also find that some mornings, I lollygag around the kitchen making breakfast, eating, social media-ing, and waste a crap ton of time. Although I LOVE to make fresh egg scrambles in the morning, there are some mornings I should be getting out the door a little faster.

Enter pre-made breakfast I can heat up, or eat cold (aka overnight oats) at home OR at work. This is also a good plan for Kyle, because he takes two larger meals to eat at work. Breakfast foods are usually cheaper to make, and can give his meals he packs a little more variety than eating pulled pork and rice twice a day.

I am going to play around with some breakfast options this week and see what I like best. Overnight oats can be whipped up quick the night before, so long as I remember do to them. I want to see how long oats will stay edible to prep them in batches. I’m thinking 2 days, maybe 3 days tops – but I think that might be pushing it.

It’s also going to mean a little more food prep for me during the weekends, so timing on when and what I’m prepping might change a bit. I will likely try to do necessary grocery shopping before Sunday, and do a little prepping on Saturday as well.
