We are most likely on a plane when you’re reading this, making our way back from Indianapolis to Dallas. We had a wedding for a good friend of mine from college last night. I tell ya what – I am not cut out for Midwest winters anymore!
It’s hard enough for me to pack for a trip as it is, but add the frigid weather on top of it – and I’m stumped. My closet is not made for winter weather anymore, that is for sure. I always get cracks from people down here saying how I must be accustomed to cold weather, since I’m from Wisconsin. Uuuh hellooooo….I’ve lived in Dallas for almost five years now. Plus, I never liked winter to begin with, so I’m pretty sure I have 0% snow bunny left in my bloodstream.
But I’m still 100% Cheesehead. #GoPackGo
Since I am writing this post in advance, I don’t have specific details for you on the wedding, other than it was AWESOME. Because I have a sixth sense and I know that it wouldn’t be any.other.way. I don’t get the chance to see my best buds from college very often. Except for weddings, as it seems! They’re the kind of friendships that last a lifetime – where you can go for years at a time without connecting in person and be able to pick up right where you left off! The best kind of friendships you can find. Honestly.
Rolling into this week, it appears to be a fairly busy one! At least right when we get back, since I tutor both Monday and Tuesday night this week. This will probably mean more crockpot, grab and go style dinners. This will make it easier on us for food prep tonight! I’m also basing this plan off what I know we have for meat and veggies in the house, since we won’t really have time to grocery shop. Going into next weekend should be relaxing – we have nothing on the calendar. And I told Kyle, our only plan will be to have no plans. We could really use a weekend like that!

- Healthy Sloppy Joes – 4 oz
- Green beans – 100 g
- Jasmine rice – 1/3 to 1/2 cup
- Grilled chicken wings
- Homemade pizza
What I Prepped Yesterday/Will Prep Today
- Black & white bean chicken chili
- Sloppy joes
- Jasmine rice
- Sweet potato fries
- Green beans
- Rinse black beans
- Rinse and chop onions, mushrooms, and peppers for eggs
- Rinse and dry spinach
