That cat is outta the bag. I’ve got a new full-time job.

Now that I leave the house at 7 AM, and don’t get home until 6/7 PM, meal planning is more important than ever. I need lunches and snacks ready to grab and go in the morning, and dinner ready to throw together in little to no time at all. Luckily for me, I feel like we’re pros at this now!

Not only is meal prep super important – but so is actually bringing enough food with me to work. I’ve been hungrier than ever lately! It must have something to do with me actually engaging my brain all day long instead of sitting around at work bored with nothing to do…a much needed change of pace, that’s for sure. The fact that I’m always hungry is dangerous at work now, because they’re always bringing food into the office. Don’t get me wrong – I think it’s awesome they like to treat employees – but my will power around sugar-laden foods isn’t as strong as I’d like it to be! Soooo gotta work on that, and keep healthier options at my desk 24/7.

I’m grateful for a day to relax and do my own thing at home today. The rest of the weekend wasn’t terribly busy, but I’m really craving a solid 24 hours without having to leave the house. We’re gonna catch up on laundry, do some food photography, workout, finish Season 3 of House of Cards…and make some waffles.

For now, we meal plan!

  • Fried eggs with sauteed mushrooms, black beans and onions




  • Pasta with lemon rosemary chicken breasts – trying out a new recipe
  • Romaine side salads with garlic avocado dressing


Friday Dinner/Weekend

What I Prepped Yesterday/Will Prep Today

  • Crockpot applesauce
  • Sloppy joes
  • Green beans
  • Corn
  • Hummus
  • Hummus
  • Roasted broccoli
  • Turkey meatloaf

I can prep the lemon rosemary chicken on Wednesday morning – I plan to make this an easy crockpot recipe. I figured I’d rather make this mid-week to lighten up some of the prepping I’ll do on the weekend.
