I can’t lie to you…
Last week’s meal plan didn’t have too much variety. Meaning, most of our lunches were a type of pasta with meat sauce. And we ate another type of pasta with a different kind of meat sauce for dinner a couple nights, too.
This, my friends, is the result of being too lazy to go to Costco on a Sunday! Or as we lovingly call it instead, a clean out the kitchen meal plan. We had gone to Walmart for a handful of produce items last Sunday morning, but our trip was driven by the fact we were out of eggs and we wanted to make pizza for dinner on Sunday. I was exhausted and needed a day to do pretty much nothing, so the Walmart Neighborhood Market was all I was willing to tackle. Costco had to wait. We’ll likely go today because I can’t do another week of so much pasta. Plus, we’re out of that too now.
But, I am happy to report that even though the meals were a bit carbilicious, we threw in extra nutritional value with veggies! One of my favorite things to add to pasta sauce is chopped spinach. I will either throw the spinach in the strainer when we drain our the cooked pasta, or I’ll saute it and mix it in with the sauce. Last week, I did the latter. For our dinner options, I added in zucchini noodles to them one night. The other night, we had some chopped olives and bell peppers on top!
After working on this meal plan, I figured it’s about time I write a post with our favorite items from Costco. Not only the general produce and bulk meat that we buy, but some of the packaged items too. We’ve been exploring some more convenience options they have available, and we’ve found a few we love!

I made my own veggie scrambles all week, and Kyle went with a lighter breakfast of fruit and turkey bacon. I’m also eating bagels these days as ‘breakfast number two.’ Baby needs to eat!
We both had a work lunch a couple days last week, so there wasn’t too much to prepare.
- Five cheese tortelloni from Costco
- Pasta sauce with ground turkey and sauteed spinach mixed in
- Leftover homemade pizza
- Loaded cauliflower with pulled pork
- Whole wheat spaghetti and zoodles mix with ground beef and tomato sauce
What we prepped and when
- Cooked the tortelloni and pasta sauce to prepare lunches
- Made the fruit dip
- Spiralized zucchini
- Homemade pizza was for dinner Sunday night
During the week
- Kyle made the spaghetti after work one night. We used a pre-made pasta sauce, to which he added ground beef.
- Pureed cauliflower was made the during the week.
