I tried to start a garden this summer.
It failed miserably. It was a super hot summer in Texas (or, everywhere?) and I was pregnant which means that nothing really got watered enough. My dog ate the pepper plant, the tomato plants were stunted, and sunshine and ants attacked my zucchini.
But, it wasn’t a complete loss. My basil plant took off like CRAZY. I had no idea that basil could grow into something that looks more like a bush than an herb.
We’re mid-October now and that basil is still going strong. As is seasonally appropriate for Texas this fall, it is a high of 79 today, but a high of only 46 on Monday. Something tells me the days of the basil bush are coming to an end.
This means only one thing.
With so much basil at my immediate disposal, I must make and freeze ALL the pesto. Oh, and propagate a plant or two in my kitchen windowsill. Obviously.
Vegan Kale Pesto Grocery List
Most store-bought pestos are not dairy-free, with parmesan or some other cheese as a main ingredient. While this is obviously the key to the traditional pesto’s success, I found that adding different nuts to my pestos helps keep a good flavor profile and keeps it dairy-free.
And since I put kale in all the things these days, I made kale, walnuts and basil my main ingredients! Here is everything you need to grab from the store to make this pesto.
- olive oil
- minced garlic
- garlic salt
Don’t be afraid to make this pesto and use it on everything.
On a cashew dip (yes do it please).
And obviously, PASTA!
One of my favorite ways to eat pasta is to mix it with pesto instead of a traditional sauce. Take the health factor up a notch by adding all your favorite roasted veggies to the mix!
And this serves a healthy meal to my family that my toddler will eat. You really can’t ask for a better easy meal than that!

5 Minute Vegan Kale Pesto
- 2 packed cups kale, with leaves chopped from the stems
- 12 fresh basil leaves (or more if you really love basil)
- 1/2 cup olive oil
- 1/2 cup walnuts
- 1 teaspoon minced garlic
- 1/2 teaspoon garlic salt
- pepper to taste
- Add all ingredients to food processor or high powered blender.
- Process for 3-5 minutes until pesto-like consistency is achieved.
- Serve on your favorite pastas or crackers.
