It’s been a couple of days since we’ve talked…since I seemed to have NOT mentioned the deets about our trip to Mexico that I told you about last week. Well, I kinda did that on purpose. Ya know, the whole empty-house-security-thing…my sister was staying at our place watching our dogs, and I think she appreciated us not letting everyone know we were gone. I also only managed to take two mediocre pictures of the vacation since I didn’t have my phone or internet the ENTIRE trip. I guess that means it was a successful vacation! Here is the only decent picture we took all week, which I got from Kyle’s phone.
Oh yea…I also chopped my hair last week! And got it dyed so my fake ombre look is gone now. Pretty much loving the short hair life again!
And so, it appears I have a lot of catching up to do with blogging…and meal planning. We may end up skipping it this week and just go the easy crockpot shredded chicken and salads route this week. It’d probably be good for our bodies to do a whole foods cleanse, anyway!
Speaking of cleanse…Valentine’s Day is coming up. Actually, that’d make more sense if we WEREN’T speaking of a cleanse, right? Valentine’s Day usually screams sugar and chocolate. And while I’m totally all about chocolate on any normal day, these post-vacation days are not quite so normal. After indulging for a few days, I’m ready to stay on track with healthier options this week – and leading into V-Day.
Luckily, I have a delicious healthier dessert option for any of your romantic candlelit dinners you’ll be making at home this weekend! (We’ve actually never done a candle light dinner…ever. Sounds good for this particular weekend though, dontcha think?)
I caught wind of these Yoplait Greek 100 Whips! yogurts last week.
Y’all know I’m all about Greek yogurt. It’s a healthy substitution for so many different foods! Including amazing desserts. And these Yoplait Greek 100 Whips! are amazing as a dessert option!
The consistency is just like a mousse type dessert, so I figured, why not make it into a fun parfait?
These whipped yogurt cups have only 100 calories, 9 grams of protein, and 0% fat. You can find them in 8 different flavors – the two I chose to check out were blueberry and strawberry. I totally wanted to try the vanilla cupcake, but I couldn’t find that one in the store. Sad face.
I chose to make these parfaits with a batch of my cocoa roasted almonds I had in my pantry – and it paired perfectly!
Strawberry Whipped Parfait

Ingredients
- 2 Strawberry Yoplait Greek 100 Whips! yogurt cups
- 1 cup of strawberries, sliced
- 1/4 cup cocoa roasted almonds, chopped
- 1 teaspoon mini chocolate chips
- honey to drizzle
Instructions
- In the bottom of two cups, add one dollop of the yogurt.
- Layer both cups with strawberries, and almonds. Then drizzle honey.
- Split the remaining yogurt in the two cups, and sprinkle on chocolate chips.
Courses Dessert
These whipped yogurts are a great option as a healthier dessert. They do have 12 g of sugar in each cup, which obviously a little higher than a plain, unflavored Greek yogurt. But that’s MUCH less sugar than you’d find in another whipped mousse or ice cream. So I think it’s safe to say that they are still a healthier option!

I don’t like to share when I’m alone, either! My husband was gone for 2 weeks and I just never mentioned anything until he came home. I feel it’s safer that way.

I’d have to say my favorite Valentine’s treat is anything dark chocolate. Dark chocolate bars…dark chocolate truffles…dark chocolate hot cocoa? Anything! I have tried one of these Yoplait whips so far, the blueberry one. I enjoyed it!
