A spicy Pepperjack Chicken Dip that is the perfect healthy snack for football season!
Sooo do you remember when I said every single recipe this month was going to be a dessert?
I lied. Unless you like chicken and carrots and celery after dinner.
Which, really might not be a bad idea at all, to be frankly honest with you.
The Laughing Cow asked me to create a recipe using their new Creamy Spicy Pepperjack Chicken Dip – and being the Laughing Cow fanatic that I am, I jumped on the opportunity to get some free product and a $50 gift card to grocery shop for some ingredients for a bangin’ recipe!
(I’m trying to extend my vocabulary…how am I doing? According to Urban Dictionary, I’m doing really well.)
If you aren’t familiar with Laughing Cow creamy cheese wedges, you should get familiar with them now. As in – stop reading and drive to the grocery store now. These wedges are good on anything, and add fantastic flavor when you cook with them!

I’m gonna have to go out on a limb here (but not one that’s too far up a tree – this girl is kinda scared of heights) and say that dips are one of the most popular foods this season.
FOOTBALL is here and that usually means SNACKAGE.
Snackage done the wrong way equals poundage. I don’t mean the Clay Matthews sacking Jay Cutler kind (see what I did there?), I mean the tighter pants kind.
If you’re like me, you want to enjoy snacking on the weekends without having to go buy a new pants that fit.
Enter the spicy pepperjack chicken dip! This stuff was so.freakin.good. with celery. Kinda weird? I don’t know, not really I guess.
Oh, this is also made with one of America’s new favorite ingredients. Sriracha!
Spicy Pepperjack Chicken Dip
Yield 5 servings
- 20 oz shredded chicken, finely chopped
- 4 wedges Creamy Pepperjack Laughing Cow
- 1/2 cup plain non-fat Greek Yogurt
- 2 teaspoons sriracha (additional depending on your spice level)
- 1/2 teaspoon garlic powder
- Shred cooked chicken and chop it finely.
- In a crockpot, add all ingredients.
- Cook on high for 1 hour.
- Stir ingredients together.
- Cook additional 30 minutes.
1 serving is 3 Weight Watchers points.

The easiest way to make shredded chicken is in a crockpot. If you’re making shredded chicken straight from the crockpot, you would want to drain out some of the juices before shredding and adding the rest of the ingredients. I had mine cooked prior to this recipe (food prep FTW!), and chopped it up very finely before adding it to the crockpot. I think the chopping makes it easier to use this chicken as a dip!
