Pork is one of my favorite things to make in the crock pot, because we will use it in so many different ways. I mean, I guess we do the same thing with crock pot chicken. But chicken gets boring sometimes! I used to only eat pork with BBQ sauce, but I try not to eat too many meals with it. I’ve yet to make my own BBQ sauce, and all the store-bought options are usually loaded with sugar and empty calories. Plus, you don’t really need BBQ sauce to make a pulled pork sandwich taste good! Just a little seasoning, and maybe some avocado.
I posted this recipe a really long time ago—three years to be exact. Over the years, it has changed slightly, and it definitely needed some new pictures! It’s so weird to think about where we were three years ago. I had a tiny 350 square foot studio apartment, taking pictures of food under fluorescent lighting when I wasn’t at the lab at UT Dallas. The fact that I’ve graduated, gotten married, bought a house, switched careers and have almost finished baking a baby since then makes it feel like an ETERNITY. We’ve had a very exciting few years!
I can only imagine how fast time is going to fly when we have a kiddo running around. I was talking to a girlfriend about that the other day—her daughter is getting ready to turn one soon. Seeing how much your kids change in such a short period of time makes it all feel like it goes by so much faster! Not that I’m trying to get sentimental or anything here. 🙂 When you think about it, it just makes you want to focus on what’s important!
Pulled pork sandwiches really aren’t that important. But recipes that don’t take much time or effort and allow you to spend more time with your family are, right?!
So maybe that sounds like a stretch. But if you’re hungry, grab this sandwich, not a Snickers.
Savory Pulled Pork
- 2 tablespoons lemon juice
- 1/4 cup water
- 1 tablespoons honey
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic salt
- 1 teaspoon garlic powder
- 1/2 cup white onion, chopped
- 1 whole carrot, chopped
- 2–3 pound pork roast or tenderloin
- Place roast in crock pot with the fatty side facing up. Pour liquids over the top of the roast.
- Rub top of roast with honey. Mix dry spices together, and rub into roast, mixing it with the honey.
- Add veggies, and cook on low for 10 hours.
- Once cooked, pull meat apart with a tongs and fork.
- Serve alone with veggies, or on a sandwich.
