Am I the first person ever to put a pork chop on a salad?
It seems kinda strange at first, but was amazing paired with blue cheese and honey sriracha vinaigrette!
Let’s back up before the salad and start with a full day of eats.
I guess breakfast started out with pork chops, too!
Kyle whipped up this whole egg and egg white scramble from some leftover breakfast potatoes from the weekend. The potatoes also had some chopped up pork chop in it. The eggs were topped with a bit of shredded mozzarella and served with some avocado on the side!
Cantaloupe showed up as a morning snack again.
Along with some blueberry protein muffins and homemade cinnamon peanut butter!
Lunch was the delicious pork and blue cheese salad!
My original intention was a BLT salad for this honey sriracha vinaigrette. But, I was too lazy to make bacon. And I mean, pork and bacon come from the same animal…so I figured it kinda worked. And I was right, because it did.
For this salad, I only used one tablespoon of honey sriracha vinaigrette, which is half a serving. It really is enough dressing for me. Find the recipe for the salad dressing here.
I think the BLT salad will happen again eventually, too!
Pork and Blue Cheese Salad

Ingredients
- 2 cups chopped iceberg lettuce
- 2 tablespoons blue cheese crumbles
- 3 oz pork chop, thinly sliced
- 6 cherry tomatoes, sliced
- 1/4 avocado, diced
- 1 tablespoon honey sriracha vinaigrette
Instructions
- Prepare honey sriracha vinaigrette from recipe linked above!
- Toss lettuce and cherry tomatoes in vinaigrette.
- Heat pork chop and add to salad. Add blue cheese and avocado on top.
- Enjoy!

Afternoon snacks were lots of these… another recipe that I’m not disclosing until the healthy dessert month in September rolls around!
Dinner was an amazing sandwich made from some fresh everything french bread, herb roasted turkey from Costco, mild cheddar cheese, lettuce and avocado.
The bigger the sandwich, the better!

Good idea! I love blue cheese with anything, but honey sriracha sounds wonderful with it. You should check out my flatbread pizza from monday, I think you would like that too 🙂 I love strange combinations, and that is what our HLB world is all about 🙂

I've never tried pork chop on a salad before! Actually, I rarely even cook pork at home just because I'm not sure how to cook it! What's the easiest way?

We've been grilling porkchops, which have been amazing! We cook it until the center is 160 degrees. You can bake them too, 350 degrees for 35-40 minutes if they are inch thick. We usually tenderize them before cooking, too!
I make a pork and apple salad. Honey and sriracha are such a good combo! I might have to try that out as a dressing!!

Kyle's not a huge fan of blue cheese either. I bought it to make some blue cheese salad dressing!
I would never have thought to add pork and blue cheese to salad! Sounds delicious and can't wait for that ball recipe 🙂
