These Peanut Butter Banana Oatmeal Cookies are a healthy treat that uses only five ingredients. Perfect for bringing along as a snack or dessert for any meal!

- 1 over-ripe banana
- ½ cup peanut butter (I used Skippy Natural)
- ¼ cup coconut sugar
- 1 egg
- 1 cup steel cut oats
- ¼ cup chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients together well. Add a few more oats if the batter is doesn’t form well.
- Spray a cookie sheet with non-stick spray, and form into 9 cookies.
- Bake for 15 minutes, until cooked through.
- Let cool before eating.
Notes
