A paleo meal plan…say whaaaat?

Yes. You read that correctly! Kyle had decided he wants to try going Paleo. Maybe for a little while…maybe for a long while…but we’re gonna try it out! Or at least, Kyle will. I’m apprehensive about following through 100%. I like beans and peanut butter. And CHEESE and Greek yogurt. Those are actually the only unapproved foods I enjoy these days! Besides pizza crust. That’s it!

And cookies.

Hey – those are all considered clean foods! Except maybe the cookies. Unless I paleo-fy them with almond flour and maple syrup.

Undoubtedly I’ll be adding a few nonpaleo foods to my meals, but this meal plan will be set up completely Paleo. I have a feeling there will be a lot of pureed cauliflower in our future! And experimental recipes. Rice and potatoes were our fall back carbs for a while, so I need to come up with recipes with more filling carbs. My original thoughts were Brussels sprouts, sweet potatoes, beets and squash – but Kyle isn’t really into any of those foods. Carrots, broccoli and cauliflower will be running the show this week! And maybe zoodles. We could also do quinoa, since it’s technically a seed which is ‘Paleo friendly,’ but that’s gonna have to wait a week to squeeze in the budget.

Anyway, here’s our first attempt at a Paleo meal plan! It’s pretty basic, since I’m trying to create it based on foods I know we have in the house. Next week I’ll try some new things! Main meals will be portioned fairly large, since I need to feel out what snacks we can make. Do you have any suggestions for me?
