If you asked me what day it was today, I’d probably tell you I brought a salad for lunch.
It’s been one of those week where I can’t keep the days straight and I’m completely focused on deadlines. I seriously thought it was Thursday ever since Monday afternoon because this week has dragged on like it has no end. (I hear it ends tomorrow, but I’m not quite sure about that.)
It’s also been one of those weeks where I’ve had salad for nearly EVERY meal because it’s the only thing I can throw together in less than 5 minutes with the food I have prepped. I think it’s really no surprise to anyone my food prep is targeted toward a meal that says ole. Besides a sandwich here and there, these Mexican salads have been the reason I can keep trucking through the week!
Generally I’m not one to use salad dressings, but I ran out of avocado the other day (the horror!) and needed a quick fix for my now ‘dry’ salad. The solution? Mexican ranch dressing!
Obviously, I did not forget to add cheese.
Unfortunately I don’t have much evidence of any of the food I’ve been noshing on lately, and this happened to be the only day I made a decent looking salad. Most of my meals lately look a little bit like a Chipotle burrito split open and dumped upside down into a bowl. But the great part is it tasted just like a Chipotle burrito, so all has not been lost.
This is a very simple Mexican ranch dressing recipe that requires only a couple basic ingredients, along with seasonings fairly common at home!
Mexican Ranch Dressing
Yield 4 - 2 Tablespoon servings
- 1/2 cup plain non-fat Greek yogurt
- 1 tablespoon unsweetened almond milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 3/4 teaspoon cumin
- 3/4 teaspoon chili powder
- 1/4 teaspoon pepper
- dash of salt
- Blend together and pour on a salad!
1 serving (2 tablespoons) is 0 Weight Watchers points. 2 servings (4 tablespoons) is 1 Weight Watchers point.
