Hey y’all! I’m just popping in this Sunday morning to give you an easy snack recipe. I meant to post this about a month ago, but somehow the pictures got lost in iCloud space and I just remembered them yesterday. I think I will make a batch of these today. That is, after I finish watching Harry Potter and the Half Blood Prince for the umpteenth time.
- 1 can chickpeas
- 1 tablespoon honey
- 1/2 teaspoon cinnamon
- Preheat oven to 425 degrees.
- Rinse chickpeas and pat dry. Take off any loose skins on the chickpeas.
- Add chickpeas to a large bowl, and drizzle honey on top. Roll chickpeas around on the bottom until all are evenly coated. Sprinkle with cinnamon, and do the same rolling process to evenly coat.
- Place on a non-stick cooking sprayed baking sheet. Bake for 30-35 minutes, stirring chickpeas about every 10 minutes to roast evenly.
These were a good change up from my normal savory roasted chickpeas, with just a hint of sweetness. I ate some of these plain, and I added some to my fruit and yogurt bowls. They would be really good thrown in a trail mix, too!
