Aww man. The fam and I have really had a whirlwind of a travel calendar. In the last 14 days I’ve spent 4 nights at home, been to 3 different airports and spent lots of time with our extended family. We enjoyed all the vacations we had planned, but OMG. I am tired. I definitely don’t feel like traveling again until I can apparate. (Wishful thinking.)
And I haven’t been grocery shopping in weeks. Gah! I don’t think I’m gonna have the energy to make it to Costco anytime soon. There’s just something about binge watching Netflix on the couch after work that sounds so much more appealing than chores—especially when you’ve been traveling for what feels like forever. That means we’ll be living off whatever we can find in the deep freezer and pantry for a while!
Luckily, there are breakfast options available that let me sleep in AND save time in the morning when I’m getting ready. Sounds too good to be true, doesn’t it?! Mornings have been a lot more complicated with Brooklyn around, and I don’t have time to sit down and eat breakfast at home—let alone find time to cook. Now I eat breakfast while checking my email and sipping my morning coffee at my desk once I get to work. (Ok let’s be honest, it’s usually my second or third cup of coffee at that point, but it’s also my last!)
I know plenty of people who are diehard oatmeal fans. I ate it when I was younger, but began my love affair with eggs when I was in grad school. They are still my number one choice, but I’ve been cutting down on them a bit. Kinda/totally off-topic…I did some research and found that they can trigger rosacea flair ups, so I’ve been eating them less frequently. It’s actually been helping! But that also means I had to find another solution to breakfast. Once I went back to work after baby, I had way less time to enjoy breakfast at home anyway. So I decided to make my own oatmeal again!
Plain oatmeal is kinda boring…but I didn’t want to buy the packaged stuff. When I’m not eating ice cream, I try to stay away from foods with lots of added sugar. The instant oatmeal packets you can buy at the store come in around 12 g. This homemade recipe? It’s only got 5! I suppose you could add a little more if your little heart so desired…but here we’re using clean ingredients so it’s really not so bad.
What do you need?
- ziplock bags
- instant oatmeal
- coconut sugar
- chia seeds
- any toppings you want!
I like to top with fresh fruit, unsweetened coconut and nut butters. Gotta jazz it up a little bit!
Then, you can choose what to make it with. I use water (it’s free and I can get it easily at the office). You could use milk or almond milk if you chose to do so. Whatever floats your oatmeal boat.

3 Ingredient Homemade Instant Oatmeal
- 1/2 cup instant rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon coconut sugar
- 1 cup water
- desired toppings
- Pour your oatmeal packet into a bowl. Add about 1 cup of water (more or less to get the consistency you want) and stir.
- Microwave for 1 min 30 sec.
- Add your toppings.
- Let the oatmeal cool for a minute or two, then enjoy!
