These simple and healthy flourless peanut butter chocolate chip cookies are sure to make any cookie lover swoon! These cookies are made with oats instead of regular flour.

What is it about a cookie that can instantly put a smile on your face?
That’s assuming you feel the same way about cookies as I do. Instant happiness. Kind of like unexpectedly finding a $10 bill in your back pocket or buying a new pair of shoes. Amiright?! I made these for Kyle’s birthday a few weeks ago. I told him that birthday cookies don’t have calories. That makes everyone even happier, don’t you think?? Anyway, he didn’t really believe me, but I’m still standing by it.
This was my first ‘flourless’ cookie recipe. And really, the first intentionally flourless recipe I’ve ever done. I have several, but I’ve never set out to make any that way. I’ve made some flourless balls before in the same way—by using ground up oats instead of whole wheat or regular flour. I’ve had oats sitting in my pantry without being touched forEVER. Or so it seemed, since oatmeal hasn’t touched my breakfast bowl in ages due to my give-me-egg-or-I’ll-die attitude.
You could probably try coconut flour too. I just bought that at Costco. I found 4 pounds for around $6! Seemed like a pretty sweet deal to me. I’ll have to sub that in one of these days and let y’all know how it turns out!
You could also make these bad boys with any nut butter you choose. I’ve made them with both homemade peanut butter and regular creamy peanut butter. Next time I’m gonna get craaaaazy and try coconut cashew butter or pistachio cashew butter! Because I’m 110% certain it will rock my socks.
And as far as the chocolate chips go…feel free to follow the recipe, or simply use as many as you please. 🙂 I prefer the mini chocolate chips because it makes it seem like you have soooo many more! I play mind games with myself sometimes when it comes to chocolate. Don’t judge me.
Basically these cookies are pretty customizable, in order to allow you to eat as many as you want.
Really though, I wouldn’t expect these to last long at home so you should probably make at least 2 batches when you try them. Maybe 3. And then send me some because mine are probably already gone, too.
- 1 cup natural peanut butter
- ⅔ cups old fashioned oats
- 1 teaspoon baking powder
- 3 tablespoons honey
- 1 egg
- ⅓ cups dark chocolate chips
- In a blender or magic bullet, grind oats until mostly smooth.
- In a large bowl, mix together peanut butter, egg, and honey.
- Stir in oats and baking powder. Once mixed, fold in dark chocolate chips.
- Chill batter for 30-40 minutes.
- Preheat oven to 350 degrees.
- Roll tablespoon sized balls onto a cookie sheet and slightly press down. Blot with a paper towel to lift off some of the grease from the peanut butter.
- Bake cookies for 10-12 minutes.
