I would like to acknowledge two things for the success of this recipe.

1. My newfound love for kale. Kale is seriously called a superfood for a reason…once you start to like it. I definitely did not for a LONG time.

Then one day I decided to try it again at a restaurant…in bowl style. My world was rocked! This is a green that stays crunchy and delicious no matter what you put on it.

2. My discovery for everything salt. This is the best seasoning ever. I had heard about an everything salt mix from Trader Joe’s, but there isn’t a TJ’s super convenient for me to get to, so my ‘mom brain’ forgot about it and I carried on with my life.

THEN I found an everything salt grinder at Michael’s for $5. Clearly, it was meant to be!

So far, this salt mix has been delicious on homemade garlic bread, sandwiches and these easy roasted summer vegetable bowls!

The Ingredients

Do you know what vegetables are in season? I googled ‘summer squash’ to make sure it was actually in season when I made this recipe. *face palm* The fact that a friend gave these to me out of her garden should have been my first clue.

While summer squash, green beans and tomatoes are all definitely summer vegetables—I threw mushrooms in here too because they’re kinda seasonal all year long. Mushrooms are also delicious when roasted!

Also look at me being really clever again calling a recipe a bowl but serving it on a plate. How much is one person allowed to blame on ‘mom brain?’

What you need for this recipe:

  • 2 summer squashes
  • 1-2 cups of cherry tomatoes
  • 1 cup mushrooms
  • pretty much as many green beans as you can fit on a pan
  • olive oil
  • everything salt (or your other favorite salt blend)
  • kale
  • pumpkin seeds
  • protein of choice (totally optional)

Easy Roasted Summer Vegetable Bowls

Yield 3 servings

Ingredients

  • 2 summer squashes
  • 1-2 cups of cherry tomatoes
  • 1 cup mushrooms
  • 2 cups fresh green beans
  • 2 tablespoons olive oil
  • everything salt (or your other favorite salt blend)
  • kale
  • pumpkin seeds
  • protein of choice (optional)

Instructions

  1. Preheat oven to 425 degrees.
  2. Grease a roasting pan with non-stick spray or olive oil
  3. Slide squash lengthwise. Chop tomatoes and mushrooms in half. Cut green beans into two-inch long pieces.
  4. Add chopped veggies to roasting pan, and drizzle with olive oil. Add seasoning.
  5. Roast for 15 minutes, flipping halfway through. Roast additional 5-10 minutes. Broil on high 2-5 minutes to get some color on squash if needed. Remove from oven and let cool.
  6. While veggies are cooling, slice kale leaves along the stem. Slice leaves into 1/4″ thick slices, and add to a bowl.
  7. Top kale with veggies, pumpkin seeds and your cooked protein of choice!
