The quest for more plant-based recipes begins!

I’ve recently talked about starting an Elimination Diet. I am not a medical professional, and I’m kinda free-balling this thing on my own. So I’ll preface this by saying you should do your own research or see an integrated medical doctor if you want to try it.

But I will tell you a little about why I’m doing it!

My rosacea has gotten bad as I’ve grown older, but more significantly since having Brooklyn. Some days are really bad. I am continually asked by strangers if I have a cold, allergies or a recent sunburn. It’s become my most irritating insecurity. It is also the reason why I frequently load up on make-up.

I’ve also been bloated…like, every day.

The more and more I hear about ‘leaky gut syndrome,’ the more I think that I am probably suffering from this too. My sister-in-law actually recently did an elimination diet for leaky gut to cure some pretty bad symptoms she’s experienced most of her adult life. Her results were pretty eye-opening.

Being the scientist that I am, I wanted to experiment on my own and see if food is a cause of any of these annoying symptoms that seem to keep getting worse.

On an elimination diet, you eliminate a lot of foods that are common allergens or intolerances. Among them are eggs, gluten, dairy, corn, soy, beef, pork, processed meats, sugar and peanuts. This is followed for three weeks before gradually adding them back into a regular diet. This helps test which foods may be causing certain symptoms.

While I do eat healthy in general, I also eat a LOT of these things. This elimination diet has forced me to find new ways to eat vegetables, and different kinds of vegetables, too. It’s helped me discover more variety in the food choices. I cooked lentils for the first time this week!

Two weeks alone on this diet has helped me feel incredibly better. The rosacea is beginning to clear up a bit, too. Even though I know I’ll likely add some of the eliminated foods back into my diet, one thing is for sure.

Plant-based is definitely the way to go. I am making it a priority to eat less meat, and I think this will start to shine through in the blog.

My latest plant-based recipe kick starts with this easy citrus Brussels sprout salad! It’s an adaptation of a friend’s recipe. Typically, Parmesan cheese is a component of it, and one I wouldn’t discourage from adding! The walnuts, though, give it a great nutty flavor that’s a bit different from your usual veggie salad.

Easy Citrus Brussels Sprout Salad Ingredients

  • 1 pound Brussels sprouts
  • Walnuts
  • Extra virgin olive oil
  • 1 lemon
  • 1 lime
  • Salt
  • Pepper
  • Parmesan cheese (optional)

Food Prep Tips

  • A food processor is the easier way to make this salad. I recently purchased the Ninja Food Processor (affiliate link) and it works amazing! However, if you don’t have a food processor—I’ve made it chopped, and it still tastes good!
  • This salad stays good for a couple of days.

Easy Citrus Brussels Sprout Salad

Yield 6 servings

Ingredients

  • 1 pound Brussels sprouts
  • 1 cup walnuts
  • 1/4 cup EVOO
  • 1 lemon
  • 1 lime
  • salt and pepper, to taste
  • Optional: fresh grated Parmesan cheese as desired

Instructions

  1. Slice the stems off Brussels sprouts and cut in half. (If not using a food processing, chop or slice into desired size.) Add to a strainer and rinse in cold water. Shake dry.
  2. Slice lemon and lime into quarters.
  3. Add Brussels sprouts and walnuts to a food process. Chop or pulse a few times, until chopped into 1/2″ pieces.
  4. Pour into a bowl, and drizzle EVOO on the top. Squire in half a lemon and half a lime. Season to taste with salt and pepper. Add more citrus juice if desired!
  5. Optional: Mix in or top with Parmesan cheese
