I totally intended to have a What I Ate in Mexico for y’all, but failed majorly in the picture taking department. Hazards of not having cell phone service or Wi-Fi on vacation…you forget to take your phone and any pictures of the trip.
Luckily, I managed to snag a day’s worth of eats on the weekend before we left! Here goes it.
This is possibly my favorite breakfast wrap…ever. The taco breakfast wrap made with fajita shredded chicken, scrambled eggs, black beans, avocado, and a bit of shredded mozzarella.
Next up was a little bit of the same…I ate the leftover eggs from breakfast with a cup of roasted potatoes Kyle whipped up in food prep for the week. I also added some rosemary roasted broccoli to the bowl, and more shredded chicken.
I promise I didn’t just eat eggs all day long. I also had a few Thin Mint girl scout cookies…
…before having a healthier afternoon snack in my Shakeology ice cream bowl! This is my all-time favorite snack lately! I top it with my homemade peanut butter and about a teaspoon of mini chocolate chips. This is a super filling snack, and also keeps me at bay from craving more sweets! This is a lifesaver, especially with those Girl Scout cookies in the house!
Shakeology Chocolate Ice Cream
- 1 scoop or packet of chocolate Shakeology
- 1/2 cup of banana slices, frozen
- 1/2 cup ice cubes
- 1/2 packet of stevia
- 1/2 cup to 3/4 cup almond milk, depending on consistency preference
- Blend it all together and serve!
And then, of course, dinner. Which was a taco salad…with more of that shredded chicken. Obviously a staple in our house!
I swear, I eat so many of the same foods in different ways. That’s what healthy eating is all about, IMO, though. You find the staples that you love, and then you need to find different ways to make them so you don’t get sick of eating it. I know so many people who think healthy eating is all about eating baked chicken and steamed veggies. Awwww heck no, it’s not! Gotta keep things spiced up with variety!
