Not that I wanna have to force you to eat anything (you already know you should be eating something green at least 2 meals a day, right? 😉 ), but sometimes we need some encouragement to bring more variety to our food’s color wheel. I personally make it a rule that if I serve a dip, I must also serve at least ONE vegetable. Crackers or homemade tortilla chips are a given, so the extra effort to add in a veggie gives both variety and incentive to eat just a little bit healthier at the party buffet you’ll be grazing.
Speaking of incentives, I told Kyle I’d like us to start earning a little bit of money for every day we hold strong with our food choices. We’ll be doing something small enough that we know we can afford, but big enough so that I can buy a nice handbag at the outlet mall by the end of summer if I try hard enough. We haven’t spoiled ourselves with money like this in a while. It’s kinda nice. I say ‘food choices’ instead of ‘meal plan’ because we both get lunch catered in at work or taken out to eat fairly often. We like to take advantage of these opportunities as they can be a huge money saver. (Thanks, boss!) But, we don’t want our waistlines to judge us for our decisions. When we do end up with free food, we will just make healthier choices. That means we skip the two scoops of something-we-really-don’t-need and beeline it for the proteins and veggies. It’s been really tough for me to make healthier choices at work, so I’m excited about having these incentives implemented this month! I ALSO am of the mind to NOT reward myself with food. Read: I WILL NOT GO TO BRAUM’S WITH MY MONEY. I need y’all to hold me to that. Fo reals.
Since we’re talking healthier choices, I wanted to give you a healthy appetizer spread for your next summer get together. This tray features a few of my favorite things!
- Basil dip – this recipe is the bees knees. It’s an Eatzi knock-off made with Greek yogurt and cream cheese.
- Almond Nut Thins – possibly the best crackers on Earth. Just go buy them. Oh, they’re also grain-free!
- Pepperjack cheese – I’m from Wisconsin, so duh. It also pairs very nicely with cucumbers!
- Cucumbers – meets the requirement of serving at least one veggie. Plus, this is a great option since you can replace it as a cracker with cheese and still get the crunch factor.
This is the perfect summer party spread because it’s very light and flavorful! You won’t regret it, I pinky swear.
