Creamy Coconut Milk Breakfast Quinoa

  1. Rinse quinoa in a fine mesh strainer. Add to a pot or large sauce pan with water and coconut milk.
  2. Put on medium-high heat and bring to a boil. Once a boil is reached, reduce to low heat. Stir in peanut butter, maple syrup and vanilla.
  3. Cover, and simmer for 12-13 minutes, stirring occasionally.
  4. Remove from heat immediately, and serve warm.
