Broccoli slaw is life changing.

At least, for salad eaters. It TOTALLY transforms a salad.

It adds a crunchy texture that brings your normal salad greens up like, 10 notches. I used to eat iceberg lettuce for the crunch-factor, but now I can make a salad much more nutritious by adding broccoli slaw to spinach!

Have you ever bought broccoli slaw? It’s been on my grocery list for a looong time, but a lot of my shopping used to get done at Walmart and they never seem to have it.

But a few weeks ago, Kyle spotted a huge score at Costco—this amazing broccoli slaw salad mix by Eat Smart. It’s mostly broccoli slaw, but includes kale, Brussels sprouts, cabbage and chicory. This salad is a kit that also includes dried cranberries, pumpkin seeds and a poppyseed dressing.

So, I can’t take 100% credit for putting together this delicious salad, but I do put my own spin on it—with my own sweet orange vinaigrette dressing! Since I’m on a mission to add spinach to nearly all of my meals these days, I eat this salad with a bunch of spinach, and some of this broccoli slaw mix piled on top. Then I load on the dried cranberry and pumpkin seed mix, with some chia seeds! You could replicate this salad easily with spinach, broccoli slaw, cranberries and pumpkin seeds. Or you can go to Costco and find the mix yourself! 🙂

The dressing that comes with this kit is good, but I enjoy making my own dressings. I wanted something that probably had a bit less sugar in it, since sugar was the second ingredient listed on the nutrition facts. This sweet orange vinaigrette is sweetened with a bit of honey and juice from an orange. The citrus flavor pairs perfectly with the rest of the salad!

I am not normally one to eat fruity salads—fruit is usually eaten by itself, not along with any other food. Maybe I’m slowly moving in another direction? Or maybe orange juice in a dressing doesn’t actually count as fruit on a salad. I suppose that’s a bit of a stretch, huh?

In any case, if you are one that likes a bit of a sweet salad, this would be perfect for you! Load this salad up with seeds and cranberries for a vegetarian lunch option, or add some grilled chicken if you’re more of a carnivore.

Broccoli Slaw Salad with Sweet Orange Vinaigrette Dressing

Ingredients

For the salad:

  • 1-2 cups spinach, chopped
  • 1 cup broccoli slaw mix
  • 1/4 cup cranberry and pumpkin seed mix (about 2 T of both)
  • sprinkle of chia seeds

For the dressing (makes more than one serving):

  • 1/3 cup extra virgin olive oil
  • 2 T apple cider vinegar
  • 1 whole orange
  • 3 T honey
  • 1/4 cup non-fat Greek yogurt

Instructions

  1. Layer the ingredients for your salad in a bowl.
  2. In a blender or magic bullet, olive oil, vinegar and honey. Squeeze the juice from the whole orange into the mix. Add Greek yogurt. Blend the dressing ingredients until they are mixed completely.
  3. Add 1-2 tablespoons of the dressing to your salad.
