Last night I had my heart set on making one of the panko recipes I’ve had stocked piled. It wasn’t hard to decide on which one to start with… avocado fries! These were really pretty easy to make.
- 1-2 avocados
- 1/4 cup flour
- 1-2 beaten eggs (depending on how many and size of avocados)
- 1-1 1/2 cups panko
- garlic salt and pepper
- non stick cooking spray
- Preheat oven to 450 degrees.
- Slice avocados into desired size of strips. I only used half of an avocado, but cut them in smaller pieces.
- Lay each side of the avocado strip in flour, doesn’t have to be completely coated. Then roll the piece in egg, and finally in panko. Place pieces on a non stick cooking sheet.
- Coat pieces with non-stick cooking spray, then sprinkle garlic salt and a little pepper on them.
- Bake for 10-12 minutes, or longer for larger pieces. Serve!
The original recipe I saw cooked them for 20 minutes. I set my timer for 15 since they were small pieces, and checked them after 10-12 minutes, and they were started to char a bit. I was surprised how crispy they got so quickly, but I’d rather have them crispy anyway.
I served these fries with a chicken salad I made from the leftover seasoned chicken I prepared for salads yesterday. I mixed the chicken with a tablespoon of miracle whip to give is a little moisture, then stuffed it inside a whole wheat pita with spinach, red onion, and green pepper.
The green pepper was a good addition to the pita, because it gave a nice crunch to the sandwich.
The fries were delicious! They turned out crunchy, but were still soft in the middle. The garlic salt was definitely a good addition. I saved most of these for last….

I was really hungry this morning, and had a pre-workout snack of half an English muffin and peanut butter. I got a bit of a late start to my workout this morning, partly from a lack of motivation. But I decided to head to the gym with the intention of a 30 minute incline workout. I ended up with a 50 minute sweaty cardio session, alternating between intervals of incline and jogging.
It was one of those days where I’d get to my original stopping point, and then I’d just keep going 5 minutes more. I really wanted to hit 4 miles in my 50 minutes, so I guess next time I’ll have to run a couple extra minutes on a higher speed. I finished up by stretching and 30 second side planks for my plank a day, then headed back home.
I broke from my norm this morning and went for a yogurt and fruit combo instead of eggs. I mixed plain yogurt, half a banana, some raisins, and melted peanut butter over the top.
I like anything I can add peanut butter too, and this tasted pretty darn good this morning!
