berry medley and leg day crossfit style?

Where did the week go? I thought yesterday it was just dragging by…then I realized today it’s already Thursday. Must have something to do with the fact I finished both of the papers I needed to complete this week. 😉

Last Night’s Dinner

Dinner last night was fairly easy. I chopped up a bunch of broccoli, coated it in EVOO and some Mrs. Dash Salt Free Garlic & Herb seasoning. I put it in the oven at 425 to roast for 20 minutes, flipping halfway through. While that was cooking, I thawed out a tilapia filet, and pan-fried it in a bit of EVOO, lemon juice, pepper, and garlic salt. Delish!
I then tried to cure my massive sweet tooth with a yogurt bowl, with 1/2 cup of plain yogurt, 1/2 cup of frozen berries, and a tablespoon of chocolate chips. It did the trick.

Workout

I was really excited for my workout today. Not sure why. I don’t ever enjoy leg day, I just get through it. I had planned to try something different through, and created my own ‘crossfit-style’ workout. I took some intense moves, and planned to do a circuit for time.
So anyhow, I started by running a mile outdoors around my apartment and ended it at the gym. Much to my dismay….the gym was closed! Our country club is doing a Fight Night event tonight, and for some reason, that required the fitness center to be closed all day. Bummer! So, I decided to tack on an extra half mile to my run, then headed back to my apartment for a modified workout.
I tried to do each round without stopping. I really wanted to add some weight to these reps, but since I wasn’t at the gym, I’ll try it next time. I had to rest a few times, because my legs were burning, and my hamstrings cramped up a bit. So cross-fit peeps…how did  I do? 

Breakfast

Ok. This is probably my favorite batch of overnight oats I’ve made so far. And I want to share the recipe with you all! 
Berry Medley Overnight Oats

Ingredients
  • 1/3 cup old fashioned oats
  • 1/3 cup plain yogurt
  • 1/3 cup almond milk
  • 1/2 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon brown sugar
  • 1/2 cup frozen berries
I served my overnight oats with a tablespoon of chopped walnuts. I think that may be what made me love these oats so much! So.freakin.good.
And now it’s time for an emergency dog park visit. I was going to try to leave for school earlier than normal, but when your pup is running figure eights in the living room by 7:30 AM, that’s usually a sign that he needs to go play.
