Breakfast has featured some green smoothies, made with spinach, blueberries, and banana. There has also been a lots of egg scrambles! Some with veggies like spinach, onion, and bell peppers…and some without.

Lunch has featured a lot of salads, in slightly different variety.
Feta & Cucumber: as the title says, with spinach, broccoli, and Balsamic dressing
Taco: Chili powder & paprika seasoned chicken, red onion, red pepper, avocado, salsa, on iceberg lettuce with a bit of ranch
Chef Salad: my favorite seasoned chicken with cucumber, carrot, red onion, broccoli, green pepper, Feta cheese, on iceberg and spinach. Served with Balsamic dressing.
The afternoon is my savory snack for the day, and I’ve been eating a lot of our awesome new chip or veggie dip, black bean salsa dip! I you like a good Mexican dip at all, you should try this one! I’ve also been making some roasted chickpeas for the afternoon, which are super easy, and filling!
Last night’s dinner was healthy turkey meatloaf. Kyle gave it 5 stars! It was soooo good.
I had never pureed vegetables to add to a meatloaf, so I was a little nervous when I did it. But, it turned out fantastic! I served this dish with a side of roasted potatoes and broccoli. Potatoes and meatloaf kinda go hand in hand, don’t you think?
